Rice gave the Hammers the lead from the penalty spot just before halftime, before Diop headed in from a corner in the second period.
Substitute Ryan Fredericks scored in the last minute in injury time, after being played by Said Benrahma, to put the icing on the cake.
West Ham lined up against the Blades without a recognized forward after Michail Antonio was again ruled out with injury.
Jesse Lingard returned to the starting lineup after missing the FA Cup defeat at parent club Manchester United.
Enda Stevens and Ben Osborn returned for the Blades, and John Fleck was lost due to illness.

Jesse Lingard was brought down by Chris Basham and Rice converted the penalty.
The Hammers doubled their lead in the 58th minute through Diop.
